History: Nestled in the heart of the Val d'Astier, this "Rolle de la forêt" parcel surrounded by cork oaks is a parcel full of biodiversity with some of the indigenous yeasts for fermentation coming from this ecosystem.

Tasting: The nose reveals notes of acacia flower and fleshy white fruit. The palate reveals ample aromas of white fruits with a finish of butter and sweetness. This wine is to be drunk with milk-based dishes in sauce, it will perfectly match with a nice cheese platter accompanied by jams.

Winemaking Technique: Manual harvest at night. Slight maceration before pressing, settling and racking into 400L new oak barrels. Fermentation with indigenous yeasts and aging on lees for 12 months. Gentle filtration before bottling and aging for one year in the cellar.
