History: After 25 years of research into the terroirs of Provence, we decided to make a great white wine with sharp and delicate teeth. This is the "Grand Cru" of the Domaine.

Tasting: The rolle, "chardonnay of the Mediterranean" brings us by its delicacy, the tasty aromas of the soil and the exoticism. Semillon, the ancestral grape of the great white wines of the south, brings the nobility and length that define wines for ageing, while Clairette brings freshness. The oak enters into a symbiosis with these juices to bring structure and aromatic complexity. A wine with toasty and buttery accents, eccentric for our appellation.

Vinification technique: The grape juice is placed directly into 400 litre new oak barrels, after fermentation by indigenous yeasts, we carry out a light stirring. Vinified without sulphite during its 8 months of ageing, it is then filtered, sulphited and bottled. This single barrel has been energised by Mother Nature through the hand of man. An alchemy between technology and the moon.
