History: A luscious red from our sandy valleys of mica schist and silica, cradled by the Mediterranean breeze.
Tasting notes: Purple colour. Nose of ripe red berries (blackcurrant, wild strawberry). On the palate, supple and pleasant tannins, with a summery roundness revealing the stewed fruits of autumn. The expression of the Provencal terroir in its purest form.
Winemaking Technique: Harvested at night. Blending carried out at harvest time. The grapes are destemmed and then placed in stainless steel vats for maceration and fermentation for about ten days at a temperature of 20°C. The must is hand-picked every day to extract substance and fruit while maintaining finesse. Pressed at the end of fermentation to keep the fruit without excess.
